Step-by-Step Method to Prepare Makhana Kheer

Step 1 - Roast the Makhana

  • Heat ghee in a heavy pan and add the makhana. Roast them on low flame for about 5–7 minutes until they become crispy and aromatic. Roasting is an important step because it enhances the flavor and texture of the makhana.
  • Properly roasted makhana gives the kheer a rich taste and prevents it from becoming chewy after cooking.

Step 2 – Crush the Makhana

  • After roasting, allow the makhana to cool slightly. Crush half of the makhana lightly using your hands or a mixer grinder. Keep the remaining makhana whole for better texture.
  • This combination of crushed and whole makhana gives the kheer a perfect creamy consistency with crunchy bites.

Step 3 – Boil the Milk

  • Take 1 liter of full cream milk in a heavy-bottom pan and bring it to a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom.
  • Using full cream milk helps achieve a thick, rich, and creamy kheer texture.

Step 4 – Add Makhana

  • Now add the roasted makhana into the boiling milk. Cook the mixture on low flame for around 15 minutes while stirring occasionally.

  • During this process, the makhana absorbs the milk and becomes soft while maintaining its delicious texture. The milk also starts becoming thicker and creamier.

Step 5 – Add Sweetener & Dry Fruits

  • Add sugar or jaggery according to your taste preference. Then add cardamom powder, chopped almonds, and cashews.

  • Mix everything properly and continue cooking for another 5–7 minutes until the kheer becomes thick and flavorful.

  • The dry fruits enhance the richness and nutritional value of the dessert while cardamom adds a beautiful aroma.

Step 6 – Serve & Enjoy

  • Your delicious makhana kheer is now ready to serve. It can be enjoyed hot during winters or chilled during summer.

  • Garnish with extra dry fruits or saffron strands for a premium presentation and enhanced taste.
